The Great Red Shark Wing Recipe

2 lbs of chicken wings

1/2 cup of water

1/3 cup of chopped onion

1 or 2 gloves of garlic minced or chopped

2 tblsp white vinegar

5 tblsp stick of butter

4 tblsp flour

1- 2 oz The Great Red Shark Hot Sauce (go lightly until you understand the Shark!)

2 tblsp lemon juice

2 tblsp of brown sugar

1/4 cup of ketchup

Make Sauce First

Melt butter in metal skillet over medium heat. Add onion and garlic, lower heat and saute 5 minutes. Do not brown. Add flour and stir to absorb all butter. Cook for 2 minutes. Stir to prevent browning or burning. Add water and stir to form thick gravy. Add all rest of ingredients, stirring each in into the sauce. Add more water if thick. Taste and adjust the Hottness with more Great Red Shark. Add a little Hawaiian Sea Salt, if you like salt. Add more sugar if not sweet enough, add more vinegar for more bite. Set aside.

Fry floured chicken in oil until crispy. Drain on paper towels.

Lay fried wings in sauce and turn to coat. Let set for a few minutes.

Serve with Celery Sticks, Ranch Dressing and Ice Cold Beers.

Have some sour cream ready if the wings are too hot. Remember sugar or milk products will cool the tongue - not water or beer.
